And safely roasted and frozen.
I used the last of the green-harvested, indoors-ripened tomatoes for this evening’s dinner (a stir-fry with onions, peppers, garlic, lime juice, honey, and Gulf coast shrimp). Quite nice.
I never envisioned that I’d be planting fall vegetables in the mountains of Western North Carolina this September, but here I am, transplanting, seeding, harvesting the last of the pole beans and yard-long beans. To be sure, I planted scavenged tranplants last year when we returned from Quebec, and had a wonderful over-wintered spinach harvest last year.
Here’s a photo of early March over-wintered spinach from last year. I had many lovely harvests from this patch.
